1.5 oz. Highclere Castle Gin
0.5 oz. Limoncello
0.5 oz. Fennel Liqueur
2 oz. Tonic Water
Juice of 1/2 a Lime
Several Sprigs of Basil
Poblano Pepper

In a mixing glass, combine Highclere Castle Gin and basil. Muddle very well, until bright green. More basil = more color and flavor. Separately, in a shaker combine lime juice and a 1" slice of poblano pepper. Muddle until pepper is pulverized. Add Limoncello and Fennel liqueur. Muddle a little more, add ice and shake until chilled. Strain into a glass over a large piece of ice. Add tonic water and stir. Fine strain basil infused gin slowly into glass so it floats on top. Stir again before sipping.
